Morton Williams always has some great deals each week. And they change so it's best to visit their FB or IG pages to check them out and the flyer on their website of course. However, It's not always easy to know what to do with everything. Here's a quick breakfast for two (or one) made with a few items on sale this week:
Filippo Berio Extra Virgin Olive Oil ($7.99/bottle);
Horizon Organic Brown Eggs ($5.99/dozen);
Sweet Vidalia Onions ($0.99/lb);
Idaho Potatoes ($0.99/lb).
We call this "Quick and Healthy Eggs and Potatoes." It's great for both weekday rush and weekend slumber. So easy to make, quick to clean, fast to eat, and out the door, or relax, that's your ingredient.
Dice and chop potatoes, onions, garlic, baby bella mushrooms, and grape tomatoes. Flame up the pan, drizzle in your olive oil and add the potatoes. Then the 'shrooms, onions and hold a bit for the garlic and drop in the sliced grape tomatoes last. Add salt and pepper too, stir so things don't stick. (If they do, no problem, mix it in, that stuff is usually the most flavorful!). You can also add a little ground cumin for a middle eastern vibe. When done (taste test the potatoes) set aside.
In same or new pan (same will add flavor), add some olive oil and crack in the eggs. When they are taking shape, try flipping the eggs keeping the yolk intact, this is "over easy," as the yolk should still run when broken. You can try "over hard" where the yolk is cooked through and will not run by letting the eggs sit there just a little longer after being flipped. Both great options. Now to serve, grab a bowl, spoon in the potatoes, and top with your egg. That's it. A quick, healthy and sale item filled breakfast. 1 onion

5 petite grape tomatoes
